Pesto Please

During the week, I prefer easy meals. Who doesn’t? I never want to sacrifice flavor for efficiency and with this Pesto, I don’t have to. Pull out your timers because this recipe comes together in 10 mins or less!

What I love:

Besides the quick prep, I also love how few items are used to prepare the dish. Because what I don’t love, is wasting time washing dishes! This recipe allows for easy substitutions. Don’t have pine nuts? Swap them out for pistachios. No need to stress if you’ve run out of parmesan, I actually used Asiago and it came out great. I have to mention the flavor! The pine nuts are buttery and the lemon zest gives the dish a certain brightness. This is a great way to use home grown basil during warmer months! Personally, I think anything you grow yourself tastes better and this dish is no exception.

You’ll need:

If you are serving the pesto with pasta, be sure to start boiling your water before you prep the sauce. It takes longer for the pasta to boil than for you to make the sauce. If you aren’t in the mood for pasta, this pesto also pairs well with chicken or fish. Slather it on top of your preferred protein and stick it in the oven.

Pesto Prep:

Take all of your ingredients and toss them in bowl of a food processor. Give them a quick blend.

You want to make sure that your pine nuts are fully broken down so your pesto isn’t too coarse, well unless that’s how you prefer it. Once your pasta is done, drain it and stir in the pesto.

When I’m not in a rush, I like to add all sorts of yummy goodness. Caramelized onions, mushrooms, cherry tomatoes and grilled chicken really kick this dish up a notch or two. I’m sure shrimp or roasted peppers would also be delicious additions.
