Today Mr. Awkward Domestic and I spent the day preparing for and attending my cousin’s gender reveal party. It was such a sweet celebration!
Congrats to the happy couple and the soon to be big brother! I can’t wait to meet my new little cousin.
You know me, any reason to gather is a reason to bake and today was no exception.
I made two batches of cupcakes. The first set were chocolate cupcakes with white chocolate butter cream icing. The second set were vanilla short cake cupcakes with vanilla butter cream icing.
Alfredo made an awesome sign using chalkboard markers and our easel.
My aunt put together group games that got everyone involved and the food was amazing.
It ended around 5 so I knew Alfredo would probably want something else to eat before bed. I spent most of the weekend in the kitchen baking so dinner would have to be quick. The food at the gender reveal was delicious but it was also heavy which meant I was leaning towards lighter fare, oh and a grocery run was completely out of the question.
I swung open the door of the refrigerator. The last quarter of my roasted buttermilk chicken was begging to be used. But what would I make?
Chicken salad of course!
Here’s what I used :
It’s really simple.
Toast bread in a toaster oven with cheese on top then set aside.
Chop chicken, grapes, celery, apple and onion.
Combine your chopped ingredients in a bowl with mayo, mustard and seasoning.
Assemble your sandwich using all the ingredients.
I served the sandwiches with caesar salads.
The rolls were brioche bread. I used these ingredients because this is what I had at home. For a healthier alternative use slightly less mayo or swap the brioche for lettuce wraps or pita.
